The epicenter for dance clubs is downtown in the gaslamp district. Lots of places have different styles going on in different parts of the club. (House upstairs, hip hip downstairs, etc). Try the Bitter End, Belo. Stingaree is the 'hot new' place, but I've never personally been there.
If you want to go more cazh (and cheaper), try Pacific Beach. The main drag, Garnet Ave has lots of clubs and bars. It's more of a college age crowd.
Mr Tiki downtown is fun, they have sushi and pupu's, and lots of crazy mixed drinks.
