I am looking for a good butcher shop in South Austin.  I am getting sick of regular supermarket quality and Whole foods is way to expensive.  I am looking for a place where I can get to know the staff and get cuts per my instructions.

You might want to try La Michoacana.  I think there's one on Stassney by Thrift Town or Thrift Land - I always confuse the two.
